Tips:
When browning the sausage, keep in larger clumps to brown, and once brown, then break meat apart.
Keep the liquid from the tomatoes…it helps with the consistency of the queso
If you don’t have breakfast sausage, try making your own with lean meat and seasonings like garlic, chili flakes, onion powder, etc.
